Recipe: Grilled eggplant panini with microgreens from Illinois' Hometown Acres

Try this delicious eggplant parmesan inspired grilled panini, featuring microgreens from Crystal Lake, Illinois' very own Hometown Acres. This sandwich can be made with any peppers, tomatoes and eggplants that you may find in your garden, or modified to add or subtract any ingredient. This recipe uses Ichiban eggplant, garden salsa peppers, and black cherry tomatoes for a mild spice, enhanced nicely with the Health Punch Blend microgreens' crisp, cold crunch.

Perfect for a summer afternoon, or made on the stovetop without a grill. Grilled Garden Eggplant Parmesan Panini Recipe

Ingredients:

1 Ichiban eggplant, 1 garden salsa pepper, 3-4 black cherry tomatoes, 3 small basil leaves, Mozzarella/parmesan/asiago cheese blendHometown Acres Health Punch Blend microgreens, 2 pieces of sourdough bread, 1 tsp minced garlic, and 1 tbsp olive oil

Step 1:

Start grill to 450. Cut all vegetables into small portions. Place 2 pieces of bread on the grill. Quarter eggplant, pour oil over pieces in a bowl. Season eggplant pieces to taste (red pepper, salt, black pepper, etc.).

Step 2:

Grill eggplant pieces until brown. Grill pepper pieces in oil with minced garlic and less than a pinch of salt.

Step 3:

Combine vegetable pieces in oil when browned. Place a handful of mozzarella, parmesan and asiago cheese blend over vegetables. Wait until melted.

Step 4:

Transfer cheese and vegetables to one slice of bread. Place cherry tomatoes over vegetables and cheese. 

Step 5:

Place basil on top of half of the panini. Put a handful of Hometown Acres’ Health Punch Blend on top of basil.
